Healthier Banana & Choc Chip Mini Muffins

At less than 180 calories each, these banana & choc chip muffins are the perfect sweet treat alternative and are super easy to make! Whenever you need to kick that sweet craving, whip these up and you'll be thankful! These never last very long in our house.

Making small changes to the ingredients you use in your bakes can make all the difference to the nutritional value and they can still taste as yummy as they normally would. Here are the small changes used in this recipe:

Wholemeal Flour: Not only does this add a richer colour when baked; it has more flavour and is denser so makes you feel fuller quicker, meaning your less likely to be wanting more.

Honey: This is the sugar substitute and as it's in its natural form you get all the goodness from it. Honey is a lot sweeter than sugar too so you use less of it. This also keeps the muffins moist and gives them a really nice syrupy squidginess.

Greek Yoghurt: This is used instead of butter and helps keep the muffins moist. I like to use plain reduced fat greek yoghurt as this gives a really nice texture to the mixture.











Ingredients

  • 220g wholemeal flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3 over ripe bananas
  • 80g honey
  • 1 tablespoon vanilla extract
  • 1 tablespoon olive or coconut oil
  • 1 egg
  • 150g plain greek yogurt
  • 1 tablespoon unsweetened almond milk
  • 50g dark chocolate chips or chopped up bar



Method

Pre-heat the oven to 180 Celsius (160 for fan ovens)
Grease a 12 hole muffin tin with non stick cooking spray. In a blender, add the bananas, honey, vanilla extract, oil, egg and yoghurt and milk and blend until totally combined and smooth. In a bowl weigh out the flour and add the baking soda and salt. Then add the wet mixture to the dry ingredients and mix until well combined. Finally fold through the chocolate chips.

Divide the mixture evenly into the tin and bake in the pre-heated oven for 20-25 minutes. Cool the muffins for 5 minutes before carefully removing them from the tin and then leave them to cool further. Go on, try one while they're still warm.
