Chocolate topped Fruit & Nut Flapjacks


Flapjacks are probably one of the easiest bakes you can make and they're great for when you want a sweet treat but are also trying to be a little bit healthier too. These Flapjacks are packed with nuts, seeds and fruit and of course are topped with a generous helping of dark chocolate. The good thing about flapjacks is you can literally put whatever you want in them. Swap hazelnuts for walnuts or almonds; dried cherries for sultanas and sunflower seeds for chia seeds and so on. Anything goes really.

This recipe makes approximately 14-16 squares.


2 ripe bananas
4 tbsp coconut oil
6 tbsp tahini
100g runny honey
2 tsp cinnamon
90g mixed seeds (pumpkin, sunflower, chia)
200g oats
50g hazelnuts
50g Dried cherries ( I used Urban Fruit dried black cherries)
50g Dark chocolate of your choice
Desiccated coconut to finish

  • Preheat the oven to 200°C or 180°C for fan ovens.
  • Mash the banana to a smooth paste with a fork or food processor
  • Melt the coconut oil over a low heat in a small pan or blast in the microwave. Remove it from the heat and add the tahini and honey.
  • Mix all of the dry ingredients in a bowl and then add the banana mush and honey mixture. Stir until well combined.
  • Press into a large lined tin and bake for 25 minutes, or until firm and golden.
  • Leave to cool in the tin while you melt the chocolate; either over a simmering pan of water on the hob or in the microwave at 20 second blasts stirring in between.
  • Drizzle the chocolate over the flapjack while still in the tin and finish with a sprinkle of desiccated coconut then leave the cool further (you can put them in the fridge for speed)
  • Finally cut into desires sized squares and enjoy.
